This recipe, found on page 91 of the cookbook was missing the flour amount.  Please

check this update for the amount of flour to be added.

Banana Loaf Recipe

 

1/4 cup of butter or margarine

1 egg, beaten

1 cup of white sugar

1 1/2 cups of flour

3 large bananas

1 tsp. salt

1 tsp. baking soda

 

Cream butter, add sugar and the well beaten egg.  Mash bananas well and add to the mixture.  Add flour, salt and baking soda to the mixture.  Grease and flour a 9” x 5” baking pan.

Bake at 350 for approximately 1 hour.

Bananas and nutrition go hand in hand.  They are great sources of an array of nutrients, with B-complex vitamins, vitamin C, potassium, manganese and magnesium.  One banana also produces 11% of the daily requirement of fiber.
